Ingredients

2 cups (about 3 medium) ripe tomatoes, diced

1/2 cup yellow bell pepper, diced

1 cup (about 2) ripe peaches, peeled and diced

3 Tablespoons jalapeno pepper, seeded and minced (see note)

1/2 cup sweet onion, diced

3 Tablespoons fresh cilantro, minced

1 teaspoon salt

3 Tablespoons balsamic vinegar
