Chicken Breast With Peach Salsa
Yield: 4 servings
Directions:
Spray grill rack with cooking spray. Mix cucumber, 2 tablespoons preserves, mint, salt, onion and peach; set aside. Cover and grill chicken for 10-15 minutes, turning and brushing with remaining peach preserves, until chicken is no longer pink inside.
Discard remaining peach preserves; serve chicken with peach and cucumber salsa.
