Easy Black Bean Soup
Directions:
Heat oil in skillet. Saute onion until tender - less than 5 minutes. Add celery, garlic, ginger -- cook 1 to 2 minutes more to release flavors.
Add everything else and simmer 30 minutes or so to mix flavors and thicken a little.
