Golden Cheese Soup

Ingredients:

  1. 1/4 cup Land O Lakes Sweet Cream Butter
  2. 1/2 cup shredded carrot
  3. 1/3 cup all- purpose flour
  4. 3 tablespoons onion, chopped
  5. 1 teaspoon instant chicken bouillon
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon dry mustard
  8. 1/4 teaspoon curry powder, if desired
  9. 1/8 teaspoon pepper
  10. 3 cups milk
  11. 1/4 teaspoon hot pepper sauce
  12. 2 cups (8 oz.) shredded Land O Lakes Process American Cheese
  13. 1/2 cup beer
  14. Garnish with popcorn
Directions:

In heavy 2-quart saucepan, melt butter over medium heat. Saute carrots in melted butter until tender (5 to 7 minutes). Remove from heat; stir in flour, onion, bouillon and seasonings until well combined. Slowly stir in milk and hot pepper sauce until smooth. Return to heat. Add cheese. Cook over medium heat, stirring frequently, until mixture thickens and comes to a boil. Boil gently for 1 minute, stirring constantly. Reduce heat; add beer and heat through. Serve immediately. Garnish with popcorn.
