Peanut Butter and Jelly Mini-Muffins

Yield:
2 dozen muffins

Perfect after school snack

Ingredients:

  1. 1 cup flour
  2. 1 teaspoon baking powder
  3. 1/2 teaspoon baking soda
  4. 1/8 teaspoon salt
  5. 1/2 cup firmly packed brown sugar
  6. 1/2 cup vanilla yogurt
  7. 1 tablespoon vegetable oil
  8. 2 tablespoons creamy peanut butter
  9. 2 eggs
  10. Non stick spray for pans
  11. Strawberry or grape jelly
Directions:

Combine flour, baking powder, soda and salt in large mixing bowl. In separate bowl, combine brown sugar, yogurt, oil, peanut butter and eggs. Mix until blended. Add to dry ingredients and stir just until well moistened. Coat mini-muffin pans with cooking spray. Fill cups about half full. Top each with 1/4 teaspoon jelly, and cover with remaining batter. Bake at 400 F. for about 12 minutes or until toothpick inserted in center comes out clean.
