Grant Street Pilaf

Yield:
Makes 4 to 6 servings.

The perfect side dish to chicken, lamb or pork.

Ingredients:

  1. 1 can (20-ounce) Dole Pineapple Chunks, in syrup
  2. 2 tablespoons soy sauce
  3. 1 teaspoon grated fresh ginger root
  4. 2 cups water
  5. 1 cup long-grain brown rice
  6. 1/2 teaspoon rosemary
  7. 2 tablespoons butter
  8. 2 tablespoons chopped green onion
  9. 1/4 cup toasted slivered almonds
Directions:

Drain pineapple syrup into saucepan. Add water and bring to boil. Stir in rice and rosemary. Cover and simmer 35 to 45 minutes, until rice is tender and liquid is absorbed. Mix in pineapple chunks and remaining ingredients and heat through.
