Mushroom Pilaf

Yield:
Makes 7 servings

A wonderful accompaniment to chicken or lamb.

Ingredients:

  1. 2 cups sliced mushrooms
  2. 1/2 cup chopped onion
  3. 2 cloves garlic, crushed
  4. 2 tablespoons chopped parsley
  5. 1 teaspoon basil leaves, crushed
  6. 1/8 teaspoon pepper
  7. 2 tablespoons Fleischmann's Margarine
  8. 2/3 cup uncooked converted rice
  9. 1 1/3 cups water
  10. 1/3 cup chopped toasted blanched almonds
Directions:

Saute mushrooms, onion, garlic, parsley, basil, and pepper in margarine about 5 minutes, stirring frequently. Sitr in rice and water. Bring to a boil over high heat. Cover; reduce heat and simmer until liquid is absorbed and rice is tender, about 25 minutes. Stir in almonds.
