Golden Capped Baked Tomatoes

Yield:
Makes 6 servings

Ingredients:

  1. 6 medium-size tomatoes
  2. Salt to taste
  3. 1/4 cup mayonnaise
  4. 1 Tablespoon prepared mustard
  5. 1 teaspoon onion, minced
  6. 1/2 teaspoon granulated sugar
  7. 2 Tablespoons panko bread crumbs
  8. Pepper to taste
Directions:

Preheat oven to 400 degrees F

Cut each tomato in half. Place cut side up in a shallow baking dish; sprinkle cut surface with salt and pepper.

Combine the mayonnaise, mustard, onion and sugar. Spoon a portion on top of each tomato; spread to cover cut surface. Sprinkle with bread crumbs.

Bake in 400 degree F oven 15 minutes or until topping is lightly puffed and tomatoes are hot.

Note:
Recipe can be prepared in advance and refrigerated until ready to bake. Baking time may need to be increased slightly.
