Summer Salad

Yield:
Makes 4 servings

Serve with muffins and iced tea for a beautiful light lunch.

Ingredients:

  1. Leaf lettuce
  2. 1 can (29-ounce) peach halves, drained
  3. 1 can (17-ounce) pear halves, drained
  4. 1 can (14-1/4-ounce) sliced pineapple, drained
  5. 1 lb. ham, thinly sliced
  6. cream cheese
  7. chopped walnuts
  8. canned blueberries
  9. whole strawberries
  10. Dressing:
  11. 3/4 cup dairy sour cream
  12. 1 tablespoon horseradish
  13. 2 teaspoons sugar
  14. 1 teaspoon lemon juice
Directions:

Dressing:
Combine the dressing ingredients; chill.

Salad:
Line platter with lettuce; arrange peaches, pears, pineapple slices and ham on lettuce. Roll cream cheese into balls; roll in walnuts. Arrange cream cheese balls with pineapple. Fill each peach half with blueberries; garnish each pear half with a strawberry. Serve with chilled dressing.
