Cold Salmon and Cucumber Salad

Yield:
Serves 4 to 6.

Ingredients:

  1. 2 envelopes unflavored gelatin
  2. 1 1/2 cups chicken broth
  3. 1/2 cup mayonnaise
  4. 2 tablespoons lemon juice
  5. 2 cups Dannon Plain yogurt
  6. 2 tablespoons minced onion
  7. 2 tablespoons chopped fresh dill
  8. 1 can (1-lb.) salmon, drained with skin and bones removed
  9. 2 cucumbers peeled, chopped and seeds removed
  10. Salt to taste
  11. Cooked rice or lettuce
  12. Garnish: hard boiled eggs
  13. tomatoes
  14. parsley
Directions:

Stir in gelatin and chicken broth over low heat until gelatin is dissolved. Beat in mayonnaise and lemon juice. Chill until the mixture is thick and syrupy.

Fold in yogurt, dill, onion, cucumbers and salmon. Pour into mold. Chill until set.

Unmold, garnish with hard-boiled eggs, parsley, tomatoes and put on a bed of cooked rice or lettuce.
