Skillet Meatloaf

Yield:
Makes 6 servings

Ingredients:

  1. 2 cans ( 6 ounces each ) V-8 Low Sodium Cocktail Vegetable Juice
  2. 1 lb. lean ground beef
  3. 1 egg, slightly beaten
  4. 1/4 cup crushed melba toast
  5. 2 tablespoons finely chopped onion
  6. 1/8 teaspoon thyme leaves, crushed
Directions:

1. In large bowl, mix well 1/4 cup V-8 Juice and remaining ingredients. Shape mixture firmly into 6 individual loaves.

2. In nonstick skillet over medium heat, brown loaves on all sides; spoon off fat. Add remaining juice.

3. Heat to boiling. Reduce heat to low; cover. Simmer 20 minutes, spooning sauce over loaves often.
