Grecian Rice

Yield:
Makes 4 servings

Ingredients:

  1. 3 tablespoons butter or margarine
  2. 1/2 cup finely chopped onion
  3. 1/2 cup finely chopped green pepper
  4. 2 cloves garlic, minced or pressed
  5. 1 cup long grain rice
  6. 2 cups beef bouillon
  7. 1 teaspoon cinnamon
  8. 1/2 teaspoon salt
  9. 2/3 cup Blue Diamond Chopped Natural Almonds
  10. 1/2 cup dark, seedless raisins
Directions:

In large skillet melt butter; saute onion, green pepper and garlic until barely tender. Add rice and cook, stirring often, until lightly toasted, about 4 to 6 minutes. Stir in bouillon, cinnamon and salt; cover and simmer 10 minutes. Stir in almonds and raisins; continue cooking, covered, another 5 minutes or until all liquid is absorbed.
