Easy Corn Puff

Yield:
Makes 6 servings

Ingredients:

  1. 2 pkgs. (10-oz.) frozen corn or chopped broccoli
  2. 1 cup Bisquick Baking Mix
  3. 1 cup milk
  4. 2 eggs
  5. 1/2 teaspoon salt
  6. 1 cup shredded Cheddar cheese (about 4 ozs.)
Directions:

Heat oven to 325 F. Butter 5-cup souffle dish or 1 1/2-quart round casserole. Cook corn as directed on package; drain. Beat baking mix , milk, eggs and salt with hand beater until smooth. Stir in corn and cheese. Pour into souffle dish. Bake until knife inserted halfway between center and edge comes out clean, about 1 hour. Serve immediately.
