Cilantro Guacamole

Yield:
Makes 2 cups

Ingredients:

  1. 2 large avocados, seeled and peeled
  2. 1 small tomato, finely chopped
  3. 1/2 small red onion, finely chopped
  4. 1/2 small red pepper, finely chopped
  5. 1 jalapeno pepper, finely chopped
  6. 3 Tablespoons lime juice
  7. 2 cloves garlic, minced
  8. 1/4 cup cilantro, finely chopped
  9. 1/2 teaspoon cumin
  10. 1/4 teaspoon salt
  11. Dash pepper
Directions:

Mash avocados in a mixing bowl. Stir in remaining ingredients. Cover and chill up to 8 hours. Serve with tortilla chips.
