Hearty Halibut with Mushrooms

Ingredients:

  1. 2/3 cup thinly sliced onion
  2. 2 lbs. halibut, or other firm fish
  3. 1 1/2 cups freshly sliced mushrooms
  4. 1/3 cup chopped tomato
  5. 1/4 cup chopped green pepper
  6. 1/4 cup chopped parsley
  7. 3 tablespoons chopped pimiento
  8. 1/2 cup chicken stock or bouillon
  9. 2 tablespoons lemon juice
  10. 1/4 teaspoon dill weed
  11. fresh pepper
  12. lemon wedges
Directions:

Arrange onion slices on bottom of baking dish sprayed with nonstick cooking spray. Place fish steaks on top of onion slices. In a bowl, combine mushrooms, tomato, green pepper, parsley and pimiento. Spread over fish. In a separate bowl, combine chicken stock, lemon juice and dill. Pour over all. Sprinkle with pepper. Cover and bake at 350 F. for 25 - 30 minutes. Serve with lemon wedges.
