Irish Soda Bread Scones

Yield:
9 scones

Buttery-cheesey flavor that melts in your mouth with every bite!

Ingredients:

  1. 2 cups flour
  2. 1/4 cup granulated sugar
  3. 2 teaspoons baking powder
  4. 1/4 teaspoon baking soda
  5. 1/4 teaspoon kosher salt
  6. 1/2 cup unsalted butter, cold
  7. 3 ounces (about 1 cup) aged white cheddar cheese, shredded, I prefer Dubliner White Cheddar
  8. 1/2 cup raisins
  9. 2 teaspoons caraway seeds
  10. 1 cup buttermilk

Directions:

Preheat oven to 425 degrees F and line a baking sheet with parchment.

In a large bowl combine flour, sugar, baking powder, baking soda, and salt.

Cut cold butter into small pieces. Work butter into flour mixture using a pastry cutter (or 2 forks) until mixture is crumbly.

Stir in cheese, raisins and caraway seeds until combined. Slowly add buttermilk and stir until dough forms (dough will be sticky). Spoon about 1/3 cup dough onto baking sheet for each scone to create 9 scones.

Bake 15 to 20 minutes until tops are golden and centers are set. Cool 5 minutes on baking sheet before serving.
