Cornish Game Hens with Sweet Potato Stuffing

Ingredients:

  1. 4 sweet potatoes, peeled and cubed
  2. 1 egg
  3. 1/2 cup butter
  4. 1 teaspoon cinnamon
  5. 1/2 teaspoon nutmeg
  6. 1/2 cup chopped pecans
  7. 4 Cornish game hens
Directions:

Thaw Cornish game hens in refrigerator.

Preheat oven to 400 degrees F

Boil sweet potatoes until fork-tender approximately 25 to 30 minutes. Drain potatoes.

Mash potatoes with egg, butter, and spices. Stir in pecans.

Stuff Cornish hens and bake until the breast reaches an internal temperature of 170 F and center of stuffing reaches 165 F, about 80 minutes.
