Mocha Rum Balls

Yield:
about 4 dozen

Ingredients:

  1. 60 Nilla wafers, finely crushed
  2. 1 cup powdered sugar
  3. 1 cup Planters pecans, finely chopped
  4. 1/2 cup butter, melted
  5. 2 tablespoons light corn syrup
  6. 2 tablespoons unsweetened cocoa
  7. 1/4 cup rum
  8. 1 teaspoon instant coffee granules
  9. Powdered sugar for coating
Directions:

Mix crumbs, 1 cup powdered sugar, pecans, butter, corn syrup and cocoa in large bowl. Blend rum and instant coffee until coffee is dissolved; stir into crumb mixture. Let stand 15 minutes. Shape into 1-inch balls; roll in powdered sugar. Flavor improves with time.
