Preheat oven to 350 degrees F.
Sprinkle chicken with seasoning salt and pepper. Warm oil and vinegar in a large skillet over medium heat. Saute chicken pieces one minute per side and remove from heat.
Place chicken in a large baking dish and pour sherry over each piece. Bake for 20 to 25 minutes.
