Grilled Vegetable Packet

The perfect side to any grilled dish

Ingredients:

  1. 1 sheet (18 x 24 inches) heavy duty aluminum foil
  2. 3 cups fresh broccoli florets
  3. 2 cups fresh cauliflowerets
  4. 1 red bell pepper, cut into 1-inch pieces
  5. 1 teaspoon dried basil leaves
  6. Salt to taste
  7. 1/8 teaspoon black pepper
  8. 2 ice cubes
Directions:

Preheat grill to medium-high.

Place broccoli, cauliflower and bell pepper in the center of a sheet of heavy duty foil. Sprinkle with basil, pepper and salt. Top with ice cubes.

Bring up sides of foil; double fold top and ends to tightly seal packet, but allowing room for heat circulation inside the packet.

Grill 15 to 18 minutes on medium-high on covered grill.

Serve hot!

Note:
To cook a vegetable packet in your oven, preheat oven to 450 degrees F. Assemble packet as directed, place on a baking sheet and bake for 20 to 25 minutes.
