Pumpkin Bread (with Chocolate Chips and Raisins)

A familiar fall aroma hot out of the oven.

Ingredients:

  1. 2/3 cup butter, softened
  2. 2 2/3 cups granulated sugar
  3. 4 eggs
  4. 1 can (15 ounce) solid pack pumpkin
  5. 2/3 cup water
  6. 2 1/3 cups all-purpose flour
  7. 2 teaspoons baking soda
  8. 1/2 teaspoon salt
  9. 1/2 teaspoon baking powder
  10. 1 teaspoon cinnamon
  11. 1 teaspoon ground cloves
  12. 2/3 cup semisweet chocolate chips
  13. 2/3 cup raisins
  14. 1 cup whole wheat flour
  15. 2 teaspoons turbinado sugar (raw sugar)
Directions:

Preheat heat oven to 350 degrees F. Spray two 9 x 5 x 3- inch loaf pans or three 8-1/2 x 4-1/2 x 2-1/2- inch loaf pans with nonstick cooking spray.

In a large bowl, blend all purpose and whole wheat flours, baking soda, baking powder, cinnamon, cloves and salt.

In a large bowl, cream butter and granulated sugar until fluffy . Stir in eggs, pumpkin and water.

Add dry ingredients and stir to combine.

Stir in chocolate chips and raisins. Pour into prepared pans.

Sprinkle 1 tsp of turbinado sugar over each loaf.

Bake about 70 minutes or until wooden pick inserted in center comes out clean.
