Slow Cooker Cajun Pot Roast

Ingredients:

  1. 2 pounds boneless beef chuck roast or boneless beef arm roast
  2. 1 Tablespoon Cajun seasoning
  3. 1 package (9 ounce) frozen whole kernel corn
  4. 1/2 cup chopped onion
  5. 1/2 cup chopped green bell pepper
  6. 1 can (14.5 ounce) diced tomatoes, undrained
  7. 1/8 teaspoon black pepper
  8. 1/2 teaspoon hot sauce
Directions:

Rub entire surface of beef roast with cajun seasoning. Place roast in 3 to 4 quart slow cooker. Top with corn, onion and bell pepper.

In small bowl, combine tomatoes, pepper and hot sauce; mix well. Pour over vegetables and roast. Cover and cook on low setting for 8 to 10 hours.
