Raisin Pecan Oatmeal

Ingredients:

  1. 1/2 cup butter, softened
  2. 1 cup sugar
  3. 2 eggs
  4. 1 teaspoon vanilla
  5. 3 cups quick cooking oats
  6. 2 teaspoons baking powder
  7. 1 teaspoon salt
  8. 1/2 teaspoon cinnamon
  9. 1 cup milk
  10. 1/2 cup raisins
  11. 1/2 cup chopped pecans
Directions:

In a mixing bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine the oats, baking powder, salt and cinnamon; add to the creamed mixture alternately with milk. Stir in the raisins and pecans. Pour into a greased 3-quart microwavable dish. Cover and microwave on high for 4 minutes; stir. Cook on 50% power for 6 minutes or until oatmeal is tender.
