Roasted Vegetables and Italian Sausage

Ingredients:

  1. 4 Italian Sausages, sliced into bite size pieces
  2. 1 large onion, chopped
  3. 1 large portabello mushroom or several smaller ones, chopped
  4. 1 tomato, chopped
  5. 1 bell pepper, chopped
  6. 1 carrot, sliced diagonally into 1/4- inch slices
  7. Salt to taste
  8. Pepper to taste
Directions:

Preheat oven to 400 degrees F

Place sausage across the bottom of a large baking or roasting pan.

Cover with chopped vegetables.

Spray lightly with nonstick cooking spray and sprinkle with salt and pepper to taste.

Bake for a total of 30 to 40 minutes, stirring every 10 to 15 minutes. (The mushrooms and tomato will make the dish moist and juicy.)

Serve alone, over hot rice or on a sub bun.
