Cucumbers in Cream

Yield:
6 - 8 servings

Ingredients:

  1. 3 medium cucumbers, peeled and thinly sliced
  2. 1 medium onion, sliced
  3. 2 cups water
  4. 1/2 teaspoon salt
  5. 3/4 cup whipping cream
  6. 1/4 cup sugar
  7. 1/4 cup vinegar
Directions:

In a bowl, combine cucumbers, onion, water and salt; let stand for one hour and drain. In a serving bowl, mix remaining ingredients. Add cucumbers and onions; toss gently. Refrigerate for at least 2 hours to blend flavors.
