Broiled Mahi-Mahi with Tangy Glaze

Ingredients:

  1. 2 pounds skinless mahi-mahi fillets, cut into 4 portions
  2. 1/3 cup olive oil
  3. 1/3 cup ketchup
  4. 1/3 cup frozen lemonade concentrate, thawed
  5. 1 Tablespoon prepared yellow mustard
  6. 1/2 teaspoon salt
  7. 1/2 teaspoon garlic powder
  8. 1 large bay leaf, crumbled
Directions:

Combine oil, ketchup, lemonade concentrate, mustard, salt garlic powder and bay leaf in a large sealable plastic bag; mix well. Add fillets; turn to coat evenly. Marinate in the refrigerator for 30 minutes. Remove fillets and place on a broiler pan that's been sprayed with nonstick cooking spray. Discard marinade.

Broil 4- inches from source of heat for 4 to 5 minutes on each side. Fish is done when it flakes easily with a fork.
