Rice with Hearts of Palm

Yield:
Makes 8 servings

Ingredients:

  1. 2 cups white rice, cooked
  2. 1 cup sour cream
  3. 1 can (14-oz.) hearts of palm, drained
  4. 1 cup grated cheese
Directions:

Heat oven to 350 degrees. Spread 1 cup of rice in the bottom of a baking dish. Slice the hearts of palm into medallions and spread them over the rice. Cover with a second layer of rice, spread the sour cream over the rice, pour the liquid from the can of palmitos over the layers and sprinkle cheese on top. Bake 15 minutes or until hot.
