Ranger Cookies

Yield:
3 dozen cookies

Chewy on the inside, crisp on the outside

Ingredients:

  1. 1/2 cup shortening
  2. 1/2 cup granulated sugar
  3. 1/2 cup brown sugar (packed)
  4. 1 egg
  5. 1/2 teaspoon vanilla
  6. 1 cup all-purpose flour*
  7. 1/2 teaspoon soda
  8. 1/4 teaspoon baking powder
  9. 1/4 teaspoon salt
  10. 1 cup quick-cooking oats
  11. 1 cup fortified whole wheat flakes cereal
  12. 1/2 cup shredded coconut
Directions:

Heat oven to 375 F. Mix thoroughly shortening, granulated sugar, brown sugar, egg and vanilla. Stir in remaining ingredients. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet. Bake 10 minutes. Immediately remove from baking sheet.

*If using self-rising flour, omit soda, baking powder and salt.
