Strawberry Rhubarb Gelatin

Ingredients:

  1. 2 cups diced fresh rhubarb
  2. 3/4 cup sugar
  3. 1/4 cup cold water
  4. 1 pkg. (3 oz) strawberry gelatin
  5. 1 1/2 cups whipped topping
Directions:

In a saucepan, bring rhubarb, sugar and water to a boil. Reduce heat; simmer, uncovered for 3-5 minutes or until the rhubarb is softened. Pour into a serving bowl. Refrigerate for 20 minutes or until partially set. Fold in whipped topping; chill until firm.
