Lemon Broccoli Pasta

Yield:
4 servings (1 cup each)

Ingredients:

  1. 2 cups (16 ounce) reduced sodium chicken broth
  2. 1 teaspoon grated lemon peel
  3. 1 clove garlic, minced
  4. 1/8 teaspoon freshly ground pepper
  5. 3 ounces uncooked angel hair pasta
  6. 1/3 cup sour cream
  7. 2 Tablespoons grated Parmesan cheese
  8. 3 Tablespoons green onions, sliced
  9. 2 cups fresh or frozen broccoli florets
Directions:

Spray large nonstick saucepan with cooking spray and heat over medium heat. Add green onions and garlic; cook and stir 3 minutes or until onions are tender.

Stir in chicken broth, lemon peel and pepper and bring to a boil over high heat. Add broccoli and pasta and return to boil. Reduce heat to low. Simmer, uncovered, 6 to 7 minutes or until pasta is tender, stirring frequently.

Remove saucepan from heat. Stir in sour cream until well blended. Let stand 5 minutes. Top with cheese before serving.
