Southwest Pasta Salad

Yield:
Makes 4-5 servings

Ingredients:

  1. 2/3 cup mayonnaise
  2. 1/3 cup dairy sour cream
  3. 1/4 cup chopped fresh cilantro
  4. 2 tablespoons milk
  5. 2 tablespoons lime juice
  6. 1 fresh jalapeno pepper, seeded and finely chopped
  7. 3/4 teaspoon salt
  8. 8 ounces radiatore pasta cooked, rinsed with cold water and drained
  9. 2 large tomatoes, seeded and chopped
  10. 1 yellow bell pepper, seeded and chopped
  11. 1 zucchini squash, quartered lengthwise and thinly sliced
  12. 3 green onions, thinly sliced
Directions:

In a large bowl, combine mayonnaise, sour cream, cilantro, milk, lime juice, jalapeno pepper and salt. Add pasta, tomatoes, yellow pepper, zucchini and green onions; toss to coat. Cover; chill to blend flavors.
