Chopped Macaroni Salad

Yield:
Makes about 4 servings

Ingredients:

  1. 8 ounces uncooked medium shell pasta, cooked according to package directions using shortest cooking time
  2. 1/2 cup sour cream
  3. 1/2 cup mayonnaise
  4. 1/3 cup deli brown mustard
  5. 1 tablespoon cider vinegar
  6. 3/4 cup chopped tomatoes
  7. 1/4 cup chopped green onions
  8. 1 cup cooked chicken breast, diced
  9. Salt
  10. Freshly ground black pepper
  11. 3/4 cup chopped bell peppers
  12. 3/4 cup chopped carrots
  13. 3/4 cup chopped celery
Directions:

Rinse cooked pasta with cold water and drain; set aside.

Combine sour cream, mayonnaise, mustard and vinegar in a large bowl. Add pasta, carrots, celery, peppers, tomatoes, green onions and chicken. Toss gently to coat evenly. Season to taste with salt and pepper.

Cover; chill in refrigerator 30 minutes. Stir before serving.
