Place cucumber and watermelon in a large bowl and sprinkle with coarse salt. Stir in green onion.
In a small bowl, stir together feta cheese, lemon juice, oil and pepper; add to cucumber watermelon mixture and stir gently.
Sprinkle with extra pepper if desired.
