Red Potato Salad

Yield:
4-6 servings

Ingredients:

  1. 1/4 cup mayonnaise
  2. 1/4 cup sour cream
  3. 7 medium red potatoes, cooked and cubed
  4. 1/4 cup shredded cheddar cheese
  5. 2 tablespoons chopped red onion
  6. 1 strip bacon, cooked and crumbled
  7. 1 1/2 teaspoons snipped chives
  8. salt to taste
  9. pepper to taste
Directions:

In small bowl, mix together mayonnaise and sour cream and set aside.

In a large bowl, combine potatoes, shredded cheese, onion, bacon and chives. Gently blend in mayonnaise/sour cream mixture. Salt and pepper to taste and refrigerate for at least 2 hours to blend flavors before serving.
