Apple Salsa

Yield:
Makes 3 cups

Delicious served over fish, chicken or turkey

Ingredients:

  1. 2 medium red apples
  2. 2 tablespoons lime juice
  3. 1/2 cup chopped orange segments
  4. 1/2 cup finely chopped onion
  5. 1/2 cup finely chopped green pepper
  6. 1 jalapeno, washed, seeded, finely chopped
  7. 1 clove garlic, peeled and minced
  8. 2 tablespoons chopped fresh cilantro
  9. 1 tablespoon cider vinegar
  10. 1/2 teaspoon ground cumin
  11. 1 teaspoon vegetable oil
Directions:

Core and dice the apples into 1/4 inch pieces. Place in a medium bowl and toss immediately with lime juice. Stir in the orange segments, onions, green pepper, jalapeno, garlic, cilantro, cider vinegar, cumin and oil. Chill 2 hours before serving. Serve over fish, chicken or turkey.
