Warm Caribbean Salsa

Yield:
Serves 4

Ingredients:

  1. Olive oil cooking spray
  2. 1-2 teaspoons Jamaican Jerk Seasoning
  3. 1 small red onion, about 1/2 cup, diced
  4. 2 tablespoons orange juice
  5. 1 cup papaya, peeled, seeded and diced
  6. 1 medium tomato, about 1 cup, seeded and diced
  7. 1-2 tablespoons minced fresh cilantro
Directions:

Coat a skillet lightly with cooking spray and place over medium heat. Add jerk seasoning, onion and orange juice. Stir and cook until onion is tender, 3-4 minutes. Remove from heat.

Add papaya and tomato. Sprinkle with cilantro, then stir gently to mix.

Serve over baked fish, chicken or pork.
