Fruited Rice

Yield:
Serves 6

Ingredients:

  1. 3/4 cup chopped dried apricots, cherries or cranberries
  2. 1/3 cup raisins
  3. 1 1/2 cups quick-cooking brown rice
  4. 1 1/2-2 tablespoons low-sodium chicken bouillon granules
  5. 1 tablespoon dried parsley (or 3-4 tablespoons fresh)
  6. 2 teaspoon grated orange rind, or to taste
  7. 3/4 teaspoon onion powder
Directions:

Place the dried fruit and raisins in a small bowl. Add water to cover. Let soak for about 5-10 minutes, then drain.

Boil water as listed on rice package directions in a large saucepan. When the water comes to a boil, add the rice, fruit, raisins and all remaining ingredients. Reduce the heat.

Cover and simmer for 10 minutes, or until the water is absorbed.

Remove from the heat and fluff gently with a fork before serving.
