Squash Waffles

Yield:
10 waffles

Ingredients:

  1. 2 cups flour
  2. 1/4 cup sugar
  3. 4 teaspoons baking powder
  4. 1 teaspoon salt
  5. 1/4 teaspoon cinnamon
  6. 3 eggs
  7. 1 1/2 cups milk
  8. 1/2 cup mashed cooked acorn squash
  9. 2 tablespoons butter, melted
  10. Maple Syrup
Directions:

In a bowl, combine the flour, sugar, baking powder, salt and cinnamon.

Combine the eggs, milk, squash and butter; stir into dry ingredients just until combined.

Bake in a preheated waffle iron until golden brown. Serve with maple syrup.
