Ham '"n Swiss with Rice Salad

A Pillsbury Classic - serve with crusty rye bread and pineapple chunks

Ingredients:

  1. SALAD:
  2. 2 cups cold cooked long-grain white rice (cooked as directed on package)
  3. 2 cups diced cooked ham
  4. 1 cup (4 oz.) Swiss cheese, diced
  5. 1/2 cup thinly sliced celery
  6. 4 cups coarsely sliced romaine lettuce
  7. DRESSING:
  8. 1/2 cup nonfat sour cream
  9. 1/3 cup lite mayonnaise or lite salad dressing
  10. 1 teaspoon cream-style horseradish, if desired
  11. 2 teaspoons prepared mustard
Directions:

In large bowl, combine cooked rice, ham, cheese and celery; toss to mix.

In small bowl, combine all dressing ingredients; blend well. Pour over rice mixture; toss to coat.

To serve, place 1 cup lettuce on each of 4 plates. Spoon rice mixture evenly onto lettuce.
