Green Beans with Country Ham

Ingredients:

  1. 2 lbs. fresh green beans, trimmed
  2. 1/4 lb. country ham, cut into thin strips
  3. 1 med purple onion, thinly sliced and separated into rings
  4. 2 tablespoons olive oil
  5. 1/3 cup balsamic vinegar
  6. 2 teaspoons sugar
  7. 1/2 teaspoon coarsely ground pepper
  8. 1/4 cup sliced almonds, toasted
Directions:

Arrange beans in a steamer basket over boiling water; cover and steam 10 minutes or until crisp tender. Remove and keep warm.

Saute ham and onion in hot oil in a large skillet until onion is tender. Remove with a slotted spoon, reserving drippings in skillet. Stir vinegar into drippings; bring to a boil. Reduce heat, and simmer 1 to 2 minutes or until reduced by half.

Stir in ham mixture, sugar, and pepper. Add green beans, and toss. Sprinkle with almonds.
