Risotto

Ingredients:

  1. 4 tablespoons butter
  2. 1 cup medium grain rice
  3. 2 cups beef or chicken broth
Directions:

Melt butter in heavy skillet. Add rice; cook over medium heat, stirring constantly, until butter is absorbed.

Pour in 1 cup broth; cook, stirring frequently until liquid has been absorbed. Add 1/2 cup broth; cook until absorbed. Add remaining broth; stir well. Cover; simmer until broth has been absorbed, stirring occasionally.
