Plum Cobbler with Buttermilk Dumplings

Serves 6

Ingredients:

  1. 3/4 cup Karo Light Corn Syrup
  2. 1 tablespoon corn starch
  3. 1/2 teaspoon ground cinnamon
  4. 2 lbs. ripe fresh plums, pitted, quartered
  5. 1 1/4 cups buttermilk baking mix
  6. 1/2 cup finely chopped nuts (optional)
  7. 1/3 cup milk
  8. 1/4 cup sugar
Directions:

Stir together first 3 ingredients; toss with plums. Spoon into 8 x 8 x 2-inch baking dish. Bake in 400 F. oven 15 minutes.

Meanwhile, mix remaining ingredients. Beat vigorously 20 strokes. Drop by spoonfuls onto hot plums. Bake 15 to 20 minutes longer.
