Fish and Vegetable Chowder

Ingredients:

  1. 3/4 lb. (12 oz.) fresh or frozen cod, cut into 1-inch pieces
  2. 4 slices bacon, cut into 1-inch pieces
  3. 1/2 cup onion, chopped
  4. 2 cups potatoes, peeled and chopped
  5. 1 can (14.5 oz.) chicken broth
  6. 1 can (14.5 oz.) diced tomatoes
  7. 1/2 cup carrot, chopped
  8. 1/2 cup celery, chopped
  9. 2 teaspoons Italian seasoning
  10. 1/4 teaspoon ground red pepper
Directions:

In a large saucepan, cook bacon until crisp; drain fat, reserving 1 tbsp. in pan with bacon. Cook onion in drippings until tender. Stir in potatoes, broth, undrained tomatoes, carrot, celery, Italian seasonings and ground red pepper. Bring to boil; reduce heat. Cover and simmer for 15-20 minutes or until potatoes are tender.

Stir in fish. Return to boiling; reduce heat. Simmer for 3-5 minutes or until fish flakes easily when tested with a fork.
