Eggnog Quick Bread

Yield:
1 loaf

Ingredients:

  1. 2 eggs
  2. 1 cup sugar
  3. 1 cup prepared eggnog
  4. 1/2 cup butter, melted
  5. 2 teaspoons rum extract
  6. 1 teaspoon vanilla
  7. 2 1/2 cups Gold medal Flour
  8. 2 teaspoons baking powder
  9. 1/2 teaspoon salt
  10. 1/4 teaspoon nutmeg
Directions:

Grease bottom only of 9x5-inch loaf pan. Beat eggs in a large bowl. Add sugar, Eggnog, butter, rum and vanilla; blend well. Add flour, baking powder, salt and nutmeg; stir just until moistened. Pour into pan.

Bake at 350 degrees for 45-50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan. Cool 1 hour or until completely cooled. Store in refrigerator.
