Espresso-Chocolate Pudding

Yield:
Serves 2

Ingredients:

  1. 1/2 box (5 oz.) cook-and-serve pudding mix (not instant), or a scant 1/2 cup
  2. 3/4 cup low-fat milk
  3. 1/2 cup heavy cream
  4. 1/3 cup strong espresso*
  5. 2 tablespoons finely chopped quality semisweet chocolate or chocolate chips
  6. Lightly sweetened whipped cream, for garnish
  7. Spiced and candied nuts, chopped, for garnish
Directions:

Place 2 martini or wine glasses next to the stove.

Combine the pudding mix, milk, cream, espresso and chocolate in a small saucepan. Whisk constantly over low heat until it just comes to a simmer. Immediately remove from the heat and pour into the glasses (the pudding thickens quickly as it cools). Refrigerate until cold, at least 2 hours.

Garnish with whipped cream and nuts.

*If you don't have an espresso pot or maker, get a double shot to go from the coffee shop.
