Quiche Italiano

Ingredients:

  1. 1 9 inch prepared pie crust
  2. 1 1/2 cups shredded mozzarella cheese, divided
  3. 1/2 cup tomato sauce
  4. 1/3 cup pepperoni, sliced
  5. 1/4 cup chopped green pepper
  6. 1/4 cup chopped onion
  7. 2 eggs
  8. 3/4 cup heavy cream
  9. 1/4 teaspoon salt
  10. 1/4 teaspoon pepper
Directions:

Bake pie crust at 350 degrees for 6 minutes or until set; allow to cool.

Layer crust with 3/4 cup mozzarella cheese, tomato sauce, pepperoni, green pepper, onion and the remaining cheese.

In a medium mixing bowl, combine eggs, cream, salt and pepper. Mix thoroughly and pour over filling. Place on a cookie sheet and bake for 45-50 minutes or until golden and knife inserted in filling comes out clean. Cool for 15 minutes before cutting.
