Beefy Jambalaya

Yield:
4-6 servings

Ingredients:

  1. 1/2 medium onion, diced
  2. 1/4 cup diced green pepper
  3. 1 lb. ground beef
  4. 1 can (28 oz.) diced tomatoes, drained with liquid reserved
  5. 1/4 teaspoon thyme
  6. 1 teaspoon salt
  7. 1/2 teaspoon sugar
  8. 1 small bay leaf
  9. 1 1/3 cups cooked rice
Directions:

Heat large skillet over medium heat. Add onion, green pepper and ground beef. Cook, stirring often, until beef is done; drain. Add enough water to reserved tomato juice to make 1 1/2 cups liquid. Add juice, tomatoes, thyme, salt, sugar and bay leaf to mixture in skillet. Simmer for 5 minutes over medium heat. Stir in rice; cover and simmer 5 more minutes. Discard bay leaf before serving.
