Swedish Meatballs Over Rice

Ingredients:

  1. 1 pkg. (1 oz.) onion soup mix
  2. 3 lb. ground beef
  3. 12 oz. ginger ale
  4. 12 oz. bottle ketchup
  5. 2 eggs
  6. 1 cup cooked rice
Directions:

In a large bowl, combine ground beef, eggs and onion soup mix. Mix well; set aside. Place a large skillet over low heat. Add ketchup and ginger ale; stir together. Roll ground beef mixture into small balls and place in skillet. Increase heat to medium, cover and cook for 20 minutes. Scoop meatball mixture over rice before serving.
