Brown Rice Slaw

Ingredients:

  1. 2 cups coleslaw mix
  2. 2 cups cooked brown rice
  3. 1 Granny Smith apple, chopped
  4. 1/3 cup orange juice concentrate
  5. 1/3 cup mayonnaise
  6. 1 teaspoon sugar
  7. 1/4 teaspoon salt
  8. 1/4 cup pecans, chopped and toasted*
Directions:

In a bowl, combine the coleslaw mix, rice and apple.

In a small bowl, combine orange juice concentrate, mayonnaise, sugar and salt; pour over coleslaw mixture and stir to coat. Cover and refrigerate to blend flavors. Stir in pecans just before serving.

*To toast pecans:
Spread pecans in a shallow pan and pop into a 350 F. oven for about 5-8 minutes or until pecans are slightly browned.
