Chicken with Wild Rice

Ingredients:

  1. 1 package (6 ounce) wild rice mix
  2. 1/4 cup green onion, thinly sliced
  3. 2 Tablespoons (1/4 stick) butter
  4. 1/2 teaspoon garlic powder
  5. 4 boneless, skinless chicken breasts
  6. 1 medium tomato, halved and thinly sliced
  7. 3/4 cup (3 ounces) mozzarella cheese, shredded
Directions:

Prepare rice mix according to package directions, adding green onion during last five minutes of cooking.

In a large skillet, heat butter and garlic powder to medium hot. Add chicken breasts and cook for 8 to 10 minutes, turning once, or until chicken is no longer pink in center.

Overlap tomato slices on top of chicken; sprinkle with mozzarella cheese and serve chicken over hot rice.
